Holiday Honey Spiced Cookies

These Holiday Honey Spice Cookies are soft, chewy, beautifully spiced, and perfect for gifting or dunking in tea. Let’s get baking!

Makes: 24 cookies
Time: 15 minutes prep + 10 minutes baking

Ingredients

Dry Ingredients

  • 2 ½ cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1 tsp ground ginger

  • ½ tsp nutmeg

  • ¼ tsp cloves (optional but amazing)

  • ½ tsp salt

Wet Ingredients

  • ½ cup unsalted butter, softened

  • ½ cup Champlain Valley honey

  • ½ cup brown sugar

  • 1 large egg

  • 1 tsp vanilla extract

For Rolling (Optional but festive!)

  • ¼ cup granulated sugar

  • OR a mix of coarse sugar + cinnamon


Instructions

1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

2. In a medium bowl, whisk together flour, baking soda, spices, and salt. Set aside.

3. In a large bowl, use a mixer (or a wooden spoon and some holiday spirit) to cream together butter, honey, and brown sugar. Mix until smooth and slightly fluffy—about 2–3 minutes.

4. Beat in the egg and vanilla until fully combined.

5. Add the dry ingredients to the wet mixture. Stir until a soft dough forms. It should be slightly tacky—honey dough often is!

6.  Scoop tablespoon-sized balls of dough. Roll each ball in granulated sugar or cinnamon sugar. Place on your baking sheets, leaving space for spreading.

7. Bake for 9–11 minutes until the cookies look set around the edges but still soft in the center. They will firm up as they cool!

8. Let cool for 5 minutes on the baking sheet, then transfer to a wire rack. Get creative and decorate with a light icing or sprinkles!
