Honey-Roasted Peach and Burrata Salad

Honey-Roasted Peach and Burrata Salad

Makes 4 servings

Ingredients

  • 4 ripe peaches, halved and pitted
  • 4 tablespoons raw honey
  • 1 tablespoon olive oil
  • 2 balls burrata
  • 1/3 cup fresh basil leaves, torn
  • 1/2 teaspoon flaky sea salt
  • 1/3 teaspoon cracked black pepper
  • 1/3 cup toasted walnuts or pecans, chopped

 

Steps

  1. Heat the grill or pan: Preheat a grill or grill pan to medium-high heat. Brush the cut side of the peach halves with 1 tablespoon olive oil.
  2. Grill the peaches: Place peaches cut-side down and grill until charred and softened, about 4 minutes. Remove and let cool slightly.
  3. Arrange the salad: On a platter, tear the burrata and nestle it among the grilled peach halves.
  4. Drizzle and garnish: Drizzle everything generously with 4 tablespoons raw honey. Scatter 1/3 cup fresh basil leaves, torn and 1/3 cup toasted walnuts or pecans, chopped, over the top.
  5. Finish and serve: Sprinkle with 1/2 teaspoon flaky sea salt and 1/3 teaspoons cracked black pepper. Serve immediately while the peaches are still warm.

Notes

Works great as a light appetizer or side! Raw honey's texture holds up nicely against the warm fruit, but you can substitute for liquid honey if you prefer.
