Grilled Peach & Raw Honey Flatbread
Ingredients
- 2 naan or flatbread rounds
- 3 ripe peaches, halved and pitted
- 2 tablespoons olive oil, divided
- 4 tablespoons raw honey, divided
- 4 ounces ounces whipped goat cheese or ricotta
- 2 ounces ounces thinly sliced prosciutto (optional)
- 3 fresh basil leaves, torn
- 1/4 teaspoon flaky sea salt
Steps
1. Heat the grill: Preheat a grill or grill pan to medium-high heat.
2. Grill the peaches: Brush the cut sides of the 3 ripe peaches, halved and pitted with 1 tablespoon of the olive oil. Place cut-side down on the grill and cook until char marks form and the peaches soften slightly.
3. Slice peaches: Remove the peaches from the grill, let cool slightly, then slice into wedges.
4. Grill the flatbread: Brush the 2 naan or flatbread rounds with the remaining 1 tablespoon of olive oil, divided on both sides. Grill until lightly charred and warmed through, about 3 minutes per side.
5. Add the cheese: Spread the 4 ounces whipped goat cheese or ricotta evenly over the warm flatbreads.
6. Layer toppings: Arrange the grilled peach slices and 2 ounces thinly sliced prosciutto (optional) over the cheese layer.
7. Finish and serve: Drizzle with the 4 tablespoons raw honey, divided, then scatter the basil leaves, torn and 1/4 teaspoons flaky sea salt on top. Slice and serve warm, right off the board.
Notes
No grill? A grill pan or even a hot cast iron skillet works fine for both the peaches and the flatbread. If your peaches are very ripe, they'll char faster, so watch them closely once they hit the heat. This also works well as an appetizer cut into small squares for a summer gathering. Enjoy!
