
Rainbow Fruit Salad with Hot Honey Citrus Dressing

🌟Ingredients
- 1/2 cup Champlain Valley liquid honey
- 1-2 jalapeños, cut into quarter inch slices

1/4 cup lemon juice
- 1/4 cup lime juice
- 1/3 cup roughly chopped mint leaves
- Lemon + lime zest
- About 1 cup of cut up, assortment of colorful fruits. We suggest:

Shaved coconut, watermelon, strawberries, orange sections, mango, pineapple, kiwis, green apples, blueberries, red cherries

🌈Instructions
1. Make the hot honey: Combine CVA honey and jalapeños in sauce pan. On medium heat, cook for 3-5 minutes (do not let boil). Remove from heat and strain out jalapeño slices. You should be left with a warm, spicy honey syrup. Let cool to room temperature.
2. Combine hot honey, lemon juice, lime juice, mint, and zest in a small bowl. Whisk until well combined.
3. Cut assortment of colorful fruit into equal, bite sized pieces. We suggest dicing or quartering the fruit.
4. In a large bowl, arrange fruits in rainbow order or layer them in stripes for a beautiful visual effect. Drizzle dressing over top and either gently toss to coat, or leave as-is for presentation and allow guests to scoop through layers.
