
Mojito with Raw Honey
☀️Did you know honey can be substituted for the sugar in a mojito?? As we hit the long, hot dog days of summer, celebrate Mojito Day today with one of our honey mojitos. Refreshing and sweet, it's the perfect way to cool off this summer.🍯
🍹Ingredients
- 7-8 leaves of fresh mint
- 1/2 lime cut into 5-6 wedges
- 2 tablespoons mint honey simple syrup (or to taste)
- 7-8 large ice cubes
- 1 1/2 fluid ounces white rum
- 1/2 cup club soda
- large cocktail glass
Mint Honey Simple Syrup
- 1/4 cup water
- 1 cup Champlain Valley raw honey
- 7 leaves large fresh mint
✅Instructions
1. Make the Mint Honey Simple Syrup:

Combine all ingredients in a small saucepan. Smash the mint with a spoon against the side of the pot to release the oils.

Bring to a simmer; continue to simmer for 5 minutes.

Remove from the heat.

Remove the mint leaves (strainer or other) and pour syrup into a glass container.

Refrigerate and use!
2. Place mint leaves and 3 lime wedges into a sturdy glass. Crush the mint and lime to release the min oils and lime juice. Add 2 more lime wedges and the honey syrup and muddle again to release the lime juice.
3. Fill glass almost to the top with ice. Pour the rum over the ice. Fill the glass with club soda.
4. Stir, taste, and add more honey syrup if needed. Garnish with the remaining lime wedge.
