🍁There’s something magical about baking in the fall—the way the kitchen fills with the scent of cinnamon, apples, and something sweet in the oven. These Honey Apple & Brie Hand Pies are everything we love about autumn wrapped in golden, flaky pastry.

They're easy to make, fun to share, and the perfect balance of tart apples, naturally sweet honey, and creamy brie. Unlike traditional pies that require a plate and fork, these hand pies are made for grabbing and going—whether you’re headed to a pumpkin patch, packing lunchboxes, or just want a little bite of comfort with your afternoon tea.

Makes: ~8 hand pies
Prep time: 25 minutes
Cook time: 20–25 minutes

Ingredients:

For the filling:

  • 2 large apples (such as Honeycrisp or Pink Lady), peeled and diced

  • ¼ cup honey (plus extra for drizzling)

  • 1 tsp ground cinnamon

  • 1 tbsp all-purpose flour or cornstarch (to thicken)

  • 1 tsp lemon juice

  • Pinch of salt

  • 4 oz brie cheese, rind removed if preferred, cut into small pieces

For the pies:

  • 1 sheet of store-bought or homemade pie dough (enough for a double crust)

  • 1 egg, beaten (for egg wash)

  • Optional: flaky sea salt or thyme leaves for topping


Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. Cook the apple filling:
    In a small saucepan over medium heat, combine diced apples, honey, cinnamon, lemon juice, flour, and a pinch of salt. Stir and cook for 5–7 minutes, until apples are slightly softened and the mixture has thickened. Remove from heat and let cool slightly.

  3. Prepare the dough:
    Roll out your pie dough and cut into 4–5 inch circles (you can use a biscuit cutter, bowl, or jar lid).

  4. Assemble the hand pies:

    • Place a spoonful of the apple filling in the center of each dough round.

    • Add 1–2 small pieces of brie on top of the apples.

    • Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.

    • Use a sharp knife to cut a small vent in the top of each pie.

  5. Finish and bake:
    Brush each pie with egg wash. If desired, sprinkle with a little flaky salt or fresh thyme for an herby finish.
    Bake for 20–25 minutes, or until golden brown and bubbly.

  6. Serve:
    Let cool slightly, then drizzle with a little extra honey just before serving.
