This Cranberry & Honey Sparkler is our winter-forward take on a celebratory mocktail— but makes for a sweet drink all year 'round. Tart cranberries bring brightness and color, while a drizzle of raw honey adds natural sweetness and depth. Finished with a splash of sparkling water and a sprig of fresh rosemary, this drink feels festive enough for a gathering and simple enough for a quiet night in.
Ingredients (serves 2)
For the cranberry-honey syrup:
- 1 cup fresh or frozen cranberries
- ½ cup water
- 3–4 tbsp honey (to taste)
For the mocktail:
- ¼ cup cranberry-honey syrup
- 1–2 tbsp fresh lemon or orange juice
- Sparkling water or club soda
- Fresh rosemary sprigs
- Fresh or frozen cranberries (for garnish)
Instructions
- Make the cranberry-honey syrup: In a small saucepan, combine cranberries and water. Bring to a gentle simmer and cook for 8–10 minutes, until cranberries burst.
- Sweeten with honey: Remove from heat and stir in honey while warm. Let cool slightly, then strain out solids. (Store syrup in the fridge for up to 1 week.)
- Build the drink: Fill two glasses with ice. Add 2 tbsp cranberry-honey syrup and a splash of citrus juice to each glass.
- Top with bubbles: Finish with sparkling water and gently stir.
- Garnish & serve: Add a rosemary sprig and a few cranberries for a festive winter look.
