Champlain Valley Honey-Sriracha Glazed Chicken Skewers

These chicken skewers are a delightful combination of sweet and spicy, featuring tender chicken marinated in a savory blend and glazed with a sauce using Champlain Valley Apiaries liquid honey and fiery sriracha. Perfect for a summer barbecue or a quick and easy weeknight meal.

Ingredients:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon minced garlic
  • 1 teaspoon grated ginger
  • 1/2 teaspoon ground black pepper
  • 1/4 cup Champlain Valley Apiaries liquid honey (of course!)
  • 2-3 tablespoons sriracha (adjust to your spice preference)
  • Wooden skewers soaked in water for at least 30 minutes (optional, but prevents burning)

Instructions:

  1. In a large bowl, whisk together the soy sauce, olive oil, rice vinegar, brown sugar, garlic, ginger, and black pepper. Add the chicken pieces and toss to coat them evenly. Marinate for at least 30 minutes, or up to overnight for maximum flavor.
  2. Preheat grill to medium-high heat. If using wooden skewers, thread the chicken pieces onto them.
  3. In a small bowl, whisk together Champlain Valley Apiaries' liquid honey and sriracha.
  4. Grill the chicken skewers for 5-7 minutes per side, or until cooked through. Brush the chicken generously with the honey-sriracha glaze during the last few minutes of cooking, flipping them to coat both sides.
  5. Serve the chicken skewers hot with your favorite dipping sauce, such as peanut sauce or a simple lime wedge.

Tips:

  • You can also bake the chicken skewers in a preheated oven at 400°F (200°C) for 20-25 minutes, or until cooked through, brushing them with the honey-sriracha glaze during the last few minutes of baking.
  • For a vegetarian option, substitute the chicken with cubes of marinated tofu or tempeh.
  • Feel free to add other vegetables to the skewers, such as bell peppers, zucchini, or red onion.
