About Us

Champlain Valley Apiaries was established by Charles Mraz (1905-1999). The firm is entering its third generation of proprietorship.

Charles' grandson Charles E. Mraz moved back to Middlebury from New York City where he has been a senior project supervisor with Sciame Construction Co. Inc. for the past eight years.

Crystallized or Raw Honey
This honey is naturally crystallized. It is packed without heating or filtering to retain its natural fragrant flavor and healthful properties that it has when extracted from the honey comb.

Liquid Honey
This honey is carefully packed to retain its natural fragrant flavor and healthful properties. Store in a dry place at room temperature and it will not spoil. In time, crystallization may occur. This can be reversed by placing the container in warm water and heating it to 140°F until it re- liquefies.

Honey may be used as a natural substitute for sugar and other refined sweeteners. It is excellent on cereals, fruit, and sandwiches; in tea or coffee and may also be substituted for sugar in cooking.
